12 Hours of Day #10

It is with many thanks to Louise at Ramblings of a Roachling, for informing me of the future dates for #photoanhour on Instagram. I knew there was one planned for when we came back from holidaying in Scotland. So on Saturday 22nd September I logged onto Instagram and noticed other Instagramers posting about #photoanhour. I decided to join in. So here’s what I got up to during my 12 hours of day!

Photo an Hour – 22nd September 2018

8am to 9am:

My Saturday began like any other day, with coffee and granola. However my day could so easily have begun at 6.30am when we were rudely woken up by headbutts from Artie wanting us to get up!!

9am to 10am:

This Saturday we went shopping at Asda for our weekly shop. We haven’t been here for a while, as we have been ordering a delivery online most weeks. It was a shock to the system to be honest! We had become used to our food being delivered every week!

10am to 11am:

Since we missed Artie’s 4th birthday, as we were away in Scotland, we decided to buy him a present of a new scratch post. The other one he had had since he was a kitten and was looking sadly worse for wear!

11am to 12pm:

We took a visit to #purplecarrot for organic Discovery Apples. 😁 As soon as I knew they had them in stock, I was round there at the soonest opportunity! You all know by now my penchant for Discovery Apples! 😀

12pm to 1pm:

We popped in for a visit to David’s family and received cuddles from their Newfoundland Bennie. 😁

1pm to 2pm:

On our way home, we stopped off at Lister Drive Fisheries and bought some finch food for our aviary.

2pm to 3pm: 

Lunch was with a cup of tea and sampling the Discovery Apples I had bought from #purplecarrot. I love the cat ornament David’s mum gave us from her recent holiday.

3pm to 4pm:

I had a date with Henry! A quick clean of the house was much needed!

4pm to 5pm:

I took to chopping lots of vegetables, ready to be roasted for the evening’s dinner. 😊 We were making roasted vegetable parcels. Always a hit in our house!

5pm to 6pm:

While the vegetables were roasting, I set the table. I like a nice, romantically lit dining room.

6pm to 7pm:

Dinner of scrumptious roasted vegetable parcels with salad was mmm… tasty!😁

7pm to 8pm:

I spent the remainder of the evening catching up with composing blog posts.

12 Hours of Day #7

Thanks to Louise from Ramblings of a Roachling, for giving me the heads up on this weekends #photoanhour on Instagram. It’s been a while since I participated so without further ado, here’s what I got up to during my 12 hours of day!

Photo an Hour – 24th March 2018

8am to 9am:

My Saturday began like many other Saturdays, at 8am. I fed Artie before making breakfast and coffee to ease myself into the morning.

9am to 10am:

We took a weekly trip to the local Asda to do the big shop.

10am to 11am:

Once returned from the supermarket, David and I headed back out towards Speke Retail Park and Dobbies.

11am to 12pm:

It was mum’s birthday on Sunday and as a gift she requested an orchid. There were many to chose from in the shop!

12pm to 1pm:

Back home, we had lunch and I enjoyed a cup of Costa coffee before the hard work of spring cleaning the house beckoned.

1pm to 2pm:

There was no getting away from the spring clean this week. I like to clean the windows in March before the clocks go forwards, which happened to be the Sunday. So I tied my hair up and gritted my teeth. Three hours+ work was ahead!

2pm to 3pm:

As expected, David and I were still working hard at cleaning. I took to cleaning the windows, while David tackled the mold on the walls. The washing machine worked splendidly and cleaned the voiles, curtains and even the settee covers!

3pm to 4pm:

By 3.30pm the bedroom window had freshly washed voiles and the spring/summer curtains were up.

4pm to 5pm:

David, took a breather from cleaning and fed the pigeons. Hoppy, who has visited for the past two years and comes to David when called, enjoyed the food offered.

5pm to 6pm:

While David was cleaning the settees, I turned my hand at making a salad to go with the evenings meal.

6pm to 7pm:

It was nice to finally sit down and enjoy a warm meal. We had pizza. I am sure I had the same dinner last #photoanhour. However this time, dinner was in daylight. The longer days of summer are on their way! Yippie! 🙂

7pm to 8pm:

There wasn’t much time to digest dinner as I remembered that it was the day to clean the finches. *sigh* So I cleaned the Blue-faced Parrot-finches’ cage while David cleaned the aviary.

From 8.30 to 9.30 (local time) David and I observed #earthhour. I turned off all the lights, lit a candle and we snuggled together to watch All the Money in the World. We left the candle burning ’til 11pm

2016 – A Year in Food.

With New Year drawing closer, it got me thinking what posts I should do as a round up of the year! One idea was ‘a year in food,’ to post 12 pictures that give a flavour of 2016! I have followed many recipes this year and prepared hundreds of dishes, (some successful, others not!), so I thought I would do a little summary.

I hope you enjoy!

January:

 At the start of the New Year I was determined to make meals that were filling, yet healthy and with produce that help reduce cholesterol. So one of the meals I made was a Red Lentil, Chickpea and Chilli soup.

Lentils are a good source of fiber, help with stabilising blood sugars and promote heart health.

February:

The 28th of February was Global Scouse Day! Scouse is the signature dish of the city of Liverpool, usually made with meat. I prefer this vegetarian version with butter-beans called Blind Scouse.

March:

One recipe I have returned to time and time again this year has been this One Pan Mexican Quinoa. It is healthy, filling and can be used with either quinoa or brown rice. It’s a very versatile dish. I see me making this for many years to come.

This Pearl Barley Risotto with a crumbling of goats cheese would have been nice if it wasn’t for the very off putting buttery taste. I may attempt the recipe again, but leave out the butter!

Vegetable and Quorn Sausage Frittata

I am not a big lover of eggs, but this 4-6 egg Vegetable and Quorn Sausage Frittata was surprisingly filling and enjoyable.

Sea Turtle loaves

As I participated in The Wildlife Trust’s 30 Days Wild. I decided to get creative in the kitchen and made some mini loaves in the shape of Sea Turtles.

Bramley Apple Pie

One of David’s friends kindly gifted us a load of Bramley apples. For weeks after I was baking and eating apple pies! They were yummy though!

The recipe I used was one by the Hairy Bikers.

Vegetable Tagine

I got the recipe for this Vegetable Tagine from a free Asda booklet. It makes a tasty dish with lots of different textures. For David, I complete it by topping it with a chicken breast, while for myself, I chop up a Quorn chicken style fillet for added protein.

September: 

A meal we don’t make too often and we should as it’s yummy, are these Spicy Mexican Bean Burgers. The recipe can be changed for any type of beans found in your store-cupboard. I serve with mounds of fresh salad.

I am not a big fan of pastry, however I decided to try this Indian Samosa Casserole. I like Indian spices so that was a plus. It served 3 to 4 people generously. I will definitely be trying the recipe again.

November:

Another dish I have made quite a few times this year is this Quinoa and Bean Soup. The original recipe called for white beans but I just used whatever beans I found in the store-cupboard! I have cooked a lot with quinoa this year due to its many health benefits.

December:

For the final meal, I thought I would choose the wonderful Curried Red Lentils. I have been cooking this easy peasy dish since the summer. I even make a big batch of them and take them to work. They are scrumptious, keep me fueled all afternoon and are healthy! I even throw in a teaspoon of turmeric just for its cancer busting properties!

24 Food Questions Tag.

Thanks to Sharon from Sunshine and Celandines who inspired me to try to answer these 24 questions. She in turn was inspired by Bev‘s blog, who ‘stole’ Kerri’s post, who borrowed the list from Llino, who cited using the tag from SarahNow I see how easy it is for ideas to travel via the internet!

There were supposed to be 25 questions, but after counting and recounting I found out that number 16 on four of the blogs was missing, so 24 questions it is! If anyone knows what happened to question 16 do let us know!

Christine: I love a nice glass of wine, or clotted cream with jam and scones, though don’t have it that often, (too fattening!!)

Sunday Sevens #3

20160313_110739Last week, after a traumatic Saturday, in which my road witnessed a tragic, sad event. Sunday dawned bleakly. David and I decided it was time to sew the seeds I had bought. We planted sweet peppers, spring onions and green beans, in the hope that something will grow come summer. I am waiting for the frosts to end so I can plant maris bard potatoes and my dahlia tubers.

Now after a week of sitting in front of the window in the guest bedroom, we have shoots finally pushing through the soil! There is hope yet!

Mum decided to treat me on Tuesday with a little trip to Costa for a cappuccino and a toasted teacake. It was very restorative.

This was the final week of my Future Learn course: Literature and Mental Health. The six week course has been tremendous and I have loved reading an eclectic mix of poetry, novels and plays. The course has me reading again after a lull of some time and has inspired me to re-read Jean Rhys’s Wide Sargasso Sea.

Aura by David Evans

It was decided that we should capture our elderly and much loved, Lady Gouldian Finch, Aura to clip his overgrowing beak. Last November Aura had the same problem and we don’t know if it was connected but he became very ill. He had fits and lay about the bottom of the cage looking exhausted. It was by fluke that his beak was sheered to its proper size and we started him on vitamin supplements. I put it down to David having healing hands and Aura was nursed back to life. Perhaps it was malnourishment due to an inability to eat with an over long beak? Either way I didn’t want a recurrence. So David captured Aura, not without some stress as the other finches were flying about the room! I held him and David clipped the tip of his beak. He seems much better now!

On Friday I didn’t have a clue what to make for the evening’s dinner. To be honest I am feeling a bit fed up with cooking. I find it exhausting looking for new recipes. So David defrosted the final serving of his curry base and made a vegetable karahi. It indeed had a kick to it!

The weekend was spent doing the usual, shopping, cleaning, cooking. Artie was exhausted!

While Artie slept during the evening. I decided to dress up, even if it was just for a salad dinner at our house, Bistro No. 49!

David’s Cooking…

On Saturday David chose the recipe for the evening meal. Spicy Mexican Bean Burgers. I am not keen on moulding food into shapes so come 4pm when we started the preparation in earnest, David took the lead. I was left to trim the salad leaves! The ingredients made 4 but David managed to make three large burgers from them.

Ingredients:

  • 1 tbsp olive oil
  •  1 red onion, finely chopped
  •  3 spring onions, thinly sliced
  • 2 garlic cloves, finely chopped
  • 1 large red chilli, deseeded and finely chopped
  • 1 tbsp Cajun spice
  • 2 x 300g tins mixed beans, drained and rinsed
  •  1 large free-range egg, beaten
  • 100g fresh breadcrumbs (50g)
  • Below are optional: we never used them
  • Small handful of fresh coriander leaves, finely chopped
  • Juice of ½ lime
  • 150g feta, crumbled
  • 8 slices Monterey Jack cheese
  • Toasted burger buns, guacamole, rocket, chopped tomatoes and sour cream to serve

Method:

  1. Heat 1 tbsp olive oil in a pan, add the onion and spring onion and fry over a gentle heat until softened but not coloured.
  2. Add the garlic, chilli and Cajun spice, then fry for 2-3 minutes.
  3. Tip into a bowl, add the beans and roughly mash.
  4. Leave to cool slightly, then add the egg, breadcrumbs, coriander and lime juice (if using). Season, then mix well to combine. Gently stir in the crumbled feta (if using). Wet your hands slightly, then shape into 4 large burgers. Double the ingredients if want to make 8!
  5. Chill 4 of them in the fridge for 30 minutes.
  6. Heat the remaining oil in a frying pan over a medium heat, add the burgers and fry for 3-4 minutes on each side until golden brown.
  7. (For surplus, freeze until solid, then pack into a plastic container, seal and freeze for up to 3 months. To cook from frozen, heat oven to gas mark 6/200 degrees oven and cook for 20-25 minutes.)

We served the burgers on toasted sesame topped buns with low fat cheese slices and lots of salad. The meal was rich and filling, though ultimately healthy!

David can cook again, it was a great success!! 😀

My Week Off.

The week commencing 20th April was taken as annual leave, and the sun smiled happily as I embarked on my week off work.

Monday:

I did some weeding in the garden and watched Artie sniff and hunt for flies. I then replanted (in bigger pots) seedlings I had growing of poppy and other seedlings which I later found out were coriander. (Looks like I didn’t need to buy the one from Lady Green!)

After working in the garden I then sat and relaxed with my Kindle and soaked up some sun while it lasted.

For dinner I made a vegetarian sausage casserole with lots of vegetables. It tasted very herby!

Tuesday:

First thing this morning I booked ‘our’ place on the Chester Zoo member’s event, of seeing ‘Islands‘ before it officially opens to the public. (Well I hope the booking has gone through!) There are some perks to being a member after all! 🙂

Mum and I had intended on taking a trip to the Maritime Museum but I felt a little unwell, so we decided on visiting my brother Stephen and to see my nephew Aaron.

Back home, in the afternoon I spent a little more time sunbathing in the garden and enjoyed a strawberry and Bliss desert, swilled down with a small measure of whisky. It didn’t seem as hot in the sun as yesterday and I grew cold quickly as well as feeling tired.

For dinner, I had bought some Jersey Royals (potatoes) so had them with smoked salmon and salad… gorgeous!

Wednesday:

A lazy day today. I sat in the garden and watched Artie chase flies. I noticed that a Blue Tit was happily gathering moss from nearby gardens and flying to a bush in another. I thought that Blue Tits only nested in boxes or crevices but after doing some research I found that their nests are cup sized and can be anywhere! I also found out that the females are the only ones that make the nests, so it was a Mrs Blue Tit who I saw!

For dinner I made a spaghetti bolognese with Quorn Swedish style meatballs. I even used freshly cut oregano from the garden! It is always a very satisfying dinner.

Thursday:

While it was St George’s Day, William Shakespeare’s birthday and World Book Day, I did very little indeed. I did the usual sweated for 20 minutes on the treadmill, had a coffee and chat with mum before having lunch.

In the afternoon Artie and I spent a few hours sunning ourselves and listened to the visiting Goldfinches and Blue Tits in the nearby trees while Classic FM played on the radio. I discovered that the seedlings I transplanted on Monday, the poppies had withered but the coriander was still looking strong!

For dinner while David had a pizza, I made do with Quorn bacon, beans, egg and chips.

In the evening as the setting sun washed everything golden, I sat listening to my favourite performance of Mahler’s 6th Symphony, the andante.

Friday:

Was the last of the ‘good’ weather of the week. It has been simply splendid to have such lovely summery weather for the week off work!

David had taken a day off work and so we headed the 1.5 hours towards Wakefield to Yorkshire Sculpture Park.  We arrived after 10.30 am and paid the £8 for all day car-parking. We then spent the next five hours walking the fields that were filled with sculptures of bronze, stone, wood, all kinds of materials. We walked literally miles, my poor feet ached!

The sculpture park is amongst the grounds of Bretton Hall Country Park which has nature trails as well as art instillations. We took a leisurely walk around the Upper Lake and spent some time amongst a Bluebell wood and old Victorian ruins.

With gloomy looking clouds encroaching, David and I headed back to Liverpool, tired but having thoroughly enjoyed our day out in Yorkshire!

I am already planning the next day out!

The weekend came and went too quickly and it was time for me to head back to work. It has been slow for me to get back into the old routine but a long Bank Holiday weekend is near which sustains me!

Good Friday

Phew… what a long day!

On this dreary, rainy morning, David said to me that, ‘I would lie in bed all day listening to the Classic FM’s Hall of Fame countdown’. I did indeed lounge for the first hour of the day. I wanted to hear who was at no. 300. It was Henry Litolff with his Concerto Symphonique No. 4. I snuggled with Artie who suckled, but by 10am I was up and have not stopped since!

Firstly I made a start with the laundry and then onto the glass/window cleaning in the house. The dining room table is always the first to get a once over!

I then paused for an hour for a chat and a coffee with Mum. Then after lunch and after David had annoyed me for not eating, I carried on the cleaning. I cleaned the bathroom and bedroom before disinfecting Artie’s cat boxes and the rooms with vinyl floors. While I left David with the vacuuming, (a chore I despise!) I checked on the plants in the garden and refilled the fat balls for the visiting Starlings and Pigeons. The Dwarf Rhododendron is flowering and the Flame of the Forest is living up to its name!

I then did 20 minutes on the treadmill and really put up a sweat before making a start on the evenings dinner. I cooked Aldi’s Atlantic Side of Salmon with lemon, tarragon and cheese crumb. We had this fish for New Years dinner and it was very filling, so I thought it would be ideal for Good Friday! I served it with Aunt Bessie’s roast potatoes and salad. It was scrumptious!

Now that the end of the first day of Classic FM’s Hall of Fame draws to a close with Handel’s Xerxes, I am finally relaxing with a toasted hot cross bun (that I was craving yesterday) and a wee dram of whiskey.

BBQ Time – Family Fun!

Since the UK has been covered with bright, warm sunshine for most of the week. We decided on Friday to have a family BBQ with myself, David, my brother Daniel and mum Heather. We cooked beef burgers and salmon on the grill and precooked Charlotte potatoes and mixed some salad. There was wine flowing and Daniel had music playing on Jade his laptop.

We all had such a good time that we decided to do it all over again on Saturday!

So David and I bought vegi burgers and spicy chicken for the main. Then meringue and strawberries to make a pudding of Strawberry Mess. With the grill smoking we all thoroughly ate like kings and had such a laugh!
